Chocolate Dipped Almond Butter Cookies

Soft, chewy, and dipped in dark chocolate — these almond butter cookies taste indulgent but are secretly wholesome. Made with just a few simple ingredients, they’re perfect for when you’re craving something sweet but don’t want to overcomplicate things.

Ingredients

  • 1/2 cup (128 g) creamy almond butter

  • 1/3 cup (80 ml ) maple syrup

  • 2 scoops (60 g) vegan vanilla protein powder

  • 1/3 cup (30 g) oat flour

  • 8 oz melted dark chocolate

  • roasted peanuts, almonds, or hazelnuts for topping (optional)

    *You can substitute the protein powder with ½ cup (60 g) oat flour.

Method

  1. Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the almond butter, maple syrup, protein powder, and oat flour until you get a smooth, soft dough.

  3. Scoop out small portions (about a teaspoon each) and roll them into balls. Place on the baking sheet, then press each one down with a fork to make a crisscross pattern.

  4. Bake for 12–14 minutes, just until the edges start to turn golden brown.

  5. Once cooled, dip half of each cookie in melted dark chocolate. Sprinkle with chopped nuts if you like, then let the chocolate set (or eat them right away — no judgment).
