Vegan Cinnamon Rolls

Soft, fluffy, and full of warm cinnamon sweetness — these buns are a lighter, naturally sweetened take on the classic. Made with healthier ingredients like spelled flour, coconut oil, and maple syrup, they’re perfect for a cozy weekend morning or when you just want your kitchen to smell amazing.

Ingredients

DOUGH:

 


  • 2 cups (250 g) spelt flour (or plain gluten-free flour)

  • 2 cups (250 g) strong white flour

  • 1 × 7 g sachet quick yeast

  • 2 tablespoons (20 g) coconut sugar

  • ½ teaspoon fine sea salt

  • ¼ cup (60 g) coconut oil

  • 1 cup + 1 tbsp (260 ml) oat milk

  • ⅓ cup (75 ml) maple syrup

  • 2 teaspoons vanilla bean paste

 

 

FILLING:

 


  • 1½ tablespoons (20 g) coconut oil

  • 1/2 cup peanut butter dark chocolate spread*

  • 2 tablespoons ground cinnamon



FINISHES:


  • 1 cup plant-based Greek-style yogurt

  • 1 scoop vanilla protein powder

or

  • 4 tablespoons maple syrup

*or sub for ½ cup (90 g) coconut sugar

Method

Make the rolls:

  1. In a large bowl, combine flours, 20 g (1½ tbsp) sugar, yeast, and salt on opposite sides. Mix to combine.

  2. Warm the oat milk, 60 g (¼ cup) coconut oil, maple syrup, and vanilla in a small saucepan until the oil melts (don’t let it boil). Let cool slightly.

  3. Add the wet ingredients to the dry and knead until smooth and elastic (~10 minutes). Cover and let rise until doubled in size, about 1 hour.

  4. Roll the dough into a 45×35 cm (18×14-inch) rectangle.

  5. For the filling, melt 20 g of coconut oil, spread it all over the dough, and then add as much peanut butter chocolate spread as you want. Alternatively, you can make” regular” rolls by mixing 90 g of coconut sugar with cinnamon.

  6. Roll up from the long side into a spiral and cut into 12 slices. Arrange in a lined baking dish, cover, and let rise for 1 hour.

  7. Bake at 200°C / 400°F (180°C fan) for 25 minutes until golden.

Finish the rolls:

  1. Combine yogurt and vanilla protein. Depending on your protein, you might need to thin it with a little bit of water to get the desired consistency.

  2. Once rolls are out of the oven, brush with maple syrup to glaze and optionally “frosting”.

  3. Dig in!
