Mom’s Soft Walnut & Jam Cookies

Soft, jam-filled, and nutty—Mom’s shortbread-style cookies that feel nostalgic and taste impossibly cozy.

Ingredients

  • 1½ cups (180 g) spelt flour

  • 1¾ cups (220 g) all-purpose flour

  • 1 cup (100 g) ground walnuts

  • 12 g baking powder

  • 1 tbsp apple cider vinegar

  • 1 cup (240 ml) grapeseed oil

  • shy 2/3 cup (150 ml) warm water

  • 1 tsp vanilla extract

  • zest of 1 lemon

  • jam for filling

  • powdered sugar for dusting

Method

  1. Mix all ingredients except the jam and powdered sugar until the dough is soft and slightly oily.

  2. Shape small balls (about 50 g each), flatten them slightly, add a little jam in the center, and seal the edges.

  3. Bake at 350°F (175°C) for 25–28 minutes, or at 400°F (200°C) for about 15 minutes if you like them more golden.

  4. Let them cool slightly, then dust with powdered sugar.

  5. Store in an airtight container at room temperature — they’ll stay fresh up to 7 days (but probably won’t last that long).
