Mom’s Soft Walnut & Jam Cookies
Soft, jam-filled, and nutty—Mom’s shortbread-style cookies that feel nostalgic and taste impossibly cozy.

Ingredients
1½ cups (180 g) spelt flour
1¾ cups (220 g) all-purpose flour
1 cup (100 g) ground walnuts
12 g baking powder
1 tbsp apple cider vinegar
1 cup (240 ml) grapeseed oil
shy 2/3 cup (150 ml) warm water
1 tsp vanilla extract
zest of 1 lemon
jam for filling
powdered sugar for dusting
Method
Mix all ingredients except the jam and powdered sugar until the dough is soft and slightly oily.
Shape small balls (about 50 g each), flatten them slightly, add a little jam in the center, and seal the edges.
Bake at 350°F (175°C) for 25–28 minutes, or at 400°F (200°C) for about 15 minutes if you like them more golden.
Let them cool slightly, then dust with powdered sugar.
Store in an airtight container at room temperature — they’ll stay fresh up to 7 days (but probably won’t last that long).
