Ingredients for Blueberry Tofu Mousse

Ingredients

  • 1 lb (454 g) Pack of silken tofu

  • 2 scoops of plant-based protein, vanilla flavor

  • 2 cups (300 g) frozen blueberries

  • 2 dates, pitted

  • 2/3 cup (60 g) old-fashioned oats

  • 4 tablespoons (21 g) flaxseed meal

 Serving

  • drizzle of peanut butter/crunchy seeds

Method

  1. Combine the silken tofu, plant-based protein powder, blueberries, pitted dates, oats, and flaxseed meal in a blender.

  2. Blend until the mixture is smooth and creamy.

  3. Divide the mixture evenly into four containers with lids.

  4. Refrigerate the containers for at least one hour to allow the mousse to set.

  5. When ready to serve, top each mousse with a dollop of peanut butter and a sprinkle of crunchy seeds for added texture and flavor.
