Method
Preheat the Oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the Dough: In a large bowl, mix together the creamy peanut butter, maple syrup, protein powder, and oat flour until you form a smooth dough.
Shape the Cookies: Scoop out 1 teaspoon-sized portions of dough and roll them into small balls. Use 2 balls to shape each cookie into a peanut form. Wetting your hands helps with the stickiness.
Press and Pattern: Arrange the shaped dough on the lined baking sheet. Press down with a fork to create a hatch pattern on top.
Bake: Place the cookies in the preheated oven and bake for 12-14 minutes until the edges are lightly golden brown.
Cool and Fill: Allow the cookies to cool completely. In the meantime, mix the peanut butter and maple syrup for the filling. Spread the filling on half of the cookies.
