Apple Pie Protein Baked Oats

The best thing about fall is the food. I'll take all the apples, pumpkins, spices, pies, ciders, and baking. This recipe is a true miracle because it tastes like dessert and gives your home all cozy vibes while being a healthy and protein-rich option.

Ingredients

Oats

  •  2/3 cup (70g) rolled oats

  • 2 scoops plant-based protein - Vanilla

  • 2 tablespoons flaxseed meal

  • 1/2 teaspoon cinnamon

  • 1 Medjool date, pitted and chopped

  • 1 banana, mashed

  • 1 tablespoon maple syrup 

  • 1 tablespoon coconut oil

  • 1 cup (240 ml) almond milk

  • Pinch of salt

 

Topping

  • 1 apple, chopped

  • 1/2 teaspoon cinnamon

  • Handful walnuts

  • 1 tablespoon maple syrup (optional)

  • 1 tablespoon coconut oil (optional)

Method

  1. Grab a large bowl and add all ingredients for oats in the order they are listed, and then whisk them well.

  2. Divide the mix between three small ramekins.

  3. Top with apple cubes, chopped walnuts, and cinnamon. For more indulgent oats, cook apples, walnuts, cinnamon, 1 tbsp of maple syrup and 1 tbsp of coconut oil for 5 minutes. Then use that to top each ramekin.

  4. Bake in preheated oven at 375°F (190°C) for 20 minutes.
