Pear Crumble Recipe

Method

  1. Put the pears in a saucepan along with the vanilla extract and coconut sugar. Set over medium heat and cook for 10 minutes, stirring frequently, until softened but still holding their shape. You’ll know the pears are ready when they begin sticking to the base of the pan. Stir in the lemon juice and zest, then pour into a small baking dish 9 x 6” (23 x 15cm)

  2. To a medium bowl, add the flour, oats, sugar, hazelnuts, dark chocolate and a small pinch of salt; pour in the coconut oil and water and bring everything together with a wooden spoon.

  3. Preheat oven to 375°F (175°C).

  4. Sprinkle the crumbs evenly over the pears, then bake the crisp until the topping is golden brown for 40 to 45 minutes.

  5. Serve warm, with vanilla ice cream or coconut vanilla yogurt on top.

Store leftovers in a container in the fridge for up to 7 days. Enjoy cold or warmed-up as breakfast or dessert/snack.
