Peanut Butter Crackers

Ingredients

  • Shy of 2 cups (220 g) whole wheat flour or oat flour

  • 1 cup (120 g) unsalted peanuts

  • 2 heaped tablespoons (40 g) natural peanut butter

  • 1 teaspoon salt

  • 2 tablespoons olive oil

  • 2/3 cup (150 ml) water

  • spices to taste: garlic, rosemary, and a little chili powder or smoked paprika

Method

  1.  Add peanuts to the food processor or blender and grind until the texture of flour.

  2. To a bigger mixing bowl, add flour, ground peanuts, salt, and spices.

  3. Add peanut butter, oil and slowly start adding water. Combine all ingredients first with a wooden spoon and later with your hands.

  4. Roll the dough into a rectangular shape with a rolling pin (thickness 0.2 in or 0.5 cm).

  5. Use a round cookie cutter or shot glass to get round crackers or cut with a knife into smaller rectangles.

  6. If you are cutting circles, you will have leftover dough pieces that you can easily bring together, knead to combine, roll it out again, and repeat until you use it all up.

  7. Bake them at 400°F (200°C) for about 20 minutes; it depends on how strong your oven is.

  8. Store in a sealed container at room temp for up to five days.
