Mini Apple Muffins

Ingredients

  • 4 apples (1.1 lb/500 g grated apples)

  • Lemon, zest, and juice

  • 10-12 (200 g) dates

  • 1/3 cup (80 g) raisins

  • 2 tbsp ground flaxseeds

  • 2 cups (150 g) rolled oats

  • 1/2 cup + 2 tbsp (150 ml) sparkling mineral water

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

Method

  1. Pour enough hot water over the dates to cover them, about 150 ml. Leave them to soak while you prepare the other ingredients, then grind them with water into a fine, smooth paste.

  2. Grind rolled oats until you reach the texture of flour.

  3. Grate apples in a large bowl, grate lemon zest over them, and pour lemon juice over them.

  4. Then add date paste, ground oatmeal, flaxseed meal, cinnamon, baking powder, raisins, and sparking water.

  5. Mix everything well. Prepare the forms for the muffins, I had small silicone containers. I oiled them a little and then poured the dough. Sprinkle with some walnuts and oats; it's not necessary, but it looks nice, and the walnuts add a nice taste.

  6. Bake for 30 to 35 minutes at 356°F (180°C). Let them cool and enjoy.
