Vegan Tiramisu

This tiramisu is a delicious and perfectly creamy summer dessert! Cream is made from cashews and enhanced with protein and I am confident you will like this healthier version better!

Vegan Tiramisu Ingredients

Ingredients

Cream

  • 2 cups (300  g) raw cashews

  • 1/4 cup maple syrup*

  • 1 teaspoon vanilla extract

  • 1/2 cup (120 ml) soy milk

  • 1 scoop (38 g) vanilla protein powder (optional)**

Assembly

  • 1 1/2 cups espresso or very strong coffee

  • 1 teaspoon vanilla extract

  • 2 tablespoons cocoa powder

  • 24 ladyfingers (7 ounce/200 g package)

  • A few slices of dark chocolate for shaving (optional)

     

    *Can be substituted with 6 Medjool dates

    **add additional 5 tbsp soy milk if using plant-based protein powder

Cashew Tiramisu

Method

  1. Place raw cashews in a heatproof bowl and cover with boiling water. Let them soak for 15 minutes to a few hours. Then, drain the cashews.

  2. Prepare the cream: In a bowl of high-speed blender, add soaked cashews, maple syrup, and vanilla extract. Optionally add protein powder and 5 tablespoons of milk. Blend until smooth. Taste and add an extra dash of milk or maple syrup if needed. 

  3. For the assembly, combine espresso and vanilla in a bowl and set aside.

  4. Using a sifter, dust the bottom of an 8x8-inch baking dish with 1 tablespoon cocoa powder.

  5. Working one at a time, quickly dip each ladyfinger into the espresso - approximately one second per side.  They are quite porous and will fall apart if left in the liquid too long.

  6. Place them rounded side up at the bottom of the baking dish. Repeat, using half the ladyfingers, until you’ve got an even layer.

  7. Spread half the cream (300 g) onto the ladyfingers in one even layer. Repeat with remaining espresso-dipped ladyfingers and remaining cream.

  8. Dust the top layer with the remaining tablespoon of cocoa powder. Cover with plastic wrap and let chill in the refrigerator for at least 3 hours (24 hours is ideal).

  9. Top with finely grated chocolate, cut into 9 pieces and serve.
