Chocolate Biscuit Log Cake

Ingredients

  • 2 cups (300 g) ground vegan biscuits

  • 4 tablespoons (44 g) coconut sugar

  • 3 heaped tablespoons  (44 g) cacao powder

  • 1/4 cup (60 g) vegan butter, melted

  • 1 cup (240ml) almond milk*

  • 4 tablespoons (60 g) dark chocolate chips

  • 3 tablespoons crushed nuts

    *you may need a little less depending on the biscuits you'll be using

Method

  1. If you have bought biscuits that are not ground up, place them in a blender or food processor and grind until you reach fine, homogeneous texture.

  2. Add ground biscuits to a bigger bowl together with coconut sugar and cacao. Mix to combine.

  3. Add milk and melted butter to the dry ingredients and mix to combine using a wooden spoon. At this stage, the dough should be soft, but it will harden in the fridge.

  4. Using plastic wrap or even parchment paper, wrap the dough into a log and place it in the fridge for 30 minutes to one hour.

  5. Place the cooled log onto the bigger plate.

  6. Cover with melted dark chocolate and sprinkle with walnuts.

  • The best plant-based is Miyokos, if you don’t have access to it, go with the same amount of coconut oil.
