Black Bean & Tahini Sandwich

Ingredients

BLACK BEAN SPREAD

  • 1/2 cup (140 g) black beans

  • 1 tablespoon tahini

  • 1 teaspoon Dijon mustard

  • 1 teaspoon maple syrup

  • 2 teaspoons lemon juice

  • Salt and pepper

  • 1/2 teaspoon garlic powder

  • 1 teaspoon dried mixed herbs

SANDWICH

  • your favorite bread

  • tomatoes

  • cucumber

  • lettuce or arugula

  • red onion

  • hot sauce

Method

Spread

  1. Drain and rinse 1/2 cup black beans.

  2. Roughly smash the black beans in a bowl with a fork. It’s ok if it’s not perfectly mashed it will add the texture.

  3. Add the remaining ingredients and mix to incorporate together. try the spread and adjust the seasoning if necessary.

Sandwich

  1. Lightly toast your bread.

  2. Add arugula and tomato slices. Add the black bean & tahini spread. Add a few slices of onion and cucumber. Optionally drizzle with some hot sauce.

  3. Enjoy!
