Vegan Fall Pumpkin Bread

Soft, moist, flavorful, and sweetened with coconut sugar, this bread is one of my favorite fall desserts.
Did I mention it’s vegan and gluten-free?

Ingredients

Dry

  • 2 cups (230g) oat flour

  • 1/4 tsp baking soda

  • 3/4 tsp baking powder

  • 1 1/2 tsp ground cinnamon

  • 1/2 tsp pumpkin pie spice

  • 1/4 tsp salt

Wet

  • 1 1/2 cups (360g) pumpkin purée

  • 1/2 cup (93g) coconut oil, melted

  • 3/4 cup (95g) coconut sugar

  • 2 tbsp flaxseed meal

  • 1/4 cup (60ml) soy milk

  • 1 tsp vanilla extract

Vanilla Protein “Frosting”

  • 1/2 cup 100 g yogurt

  • 1 scoop of vanilla protein powder

  • 50 ml soy milk*

* Depending on the protein powder's texture and absorption capacity, you might need a bit less or more milk. Start with less liquid and then add as necessary to the desired thickness.

Method



  1. Preheat the oven to 350°F.

  2. Line a 9-inch loaf pan with parchment paper, leaving a 2-inch overhang on two sides.

  3. In a small bowl, mix a flaxseed meal and water. Set aside to thicken.

  4. Whisk the flour, baking powder, spices, salt, and baking soda in a medium bowl. Whisk the oil, pumpkin purée, sugar, milk, flax 'egg,' and vanilla in a large bowl.

  5. Fold the dry ingredients into the wet ingredients until thoroughly combined. Transfer the batter to the prepared pan and smooth it into an even layer—Bake for 50 minutes.

  6. Allow the bread to cool completely.

  7. Mix yogurt with the protein and half of the milk. If the mixture seems very dry, continue adding milk until you get to the creamy, spreadable consistency.

  8. Pour the "frosting". Sprinkle with pumpkin seeds as desired. Enjoy!

Notes:

PUMPKIN PUREE: Do not mistake it for pumpkin pie mix; the only ingredient should be pumpkin. Here is the one I like to use.

FLAXSEED MEAL: Do not mistake it for flax seeds. It must be a meal (blended flax seeds), like this one.

PROTEIN: I use both plant-based protein and sometimes whey. Garden of life is my favorite plant-based, and Optimum nutrition is my favorite whey protein.
