Fig & Walnut Soda Bread

Ingredients
- 1 cup (150 g) dried figs, chopped 
- 1 cup (80 g) walnuts, chopped 
- 1 3/4 cup (210 g) whole wheat flour 
- 1 1/4 cup (175 g) wholegrain spelt flour 
- 1/2 cup (45 g) rolled oats 
- 1 teaspoon salt 
- 1 teaspoon baking soda 
- 2 cups + 3 tablespoons (500 g) plant-based yogurt 
Method
- Preheat the oven to 420°F (220°C). Line a baking sheet with parchment paper. 
- Roughly chop figs and walnuts and set aside in a small bowl. Toss in a little flour to ensure the pieces stay separate during baking. 
- In a large bowl, whisk together whole what and spelt flour, oats, salt, and baking soda. Stir in the chopped walnuts and figs. 
- Add the yogurt and mix using a spatula or your hands into a scraggy wet dough. Do not worry about it being messy. 
- Flour your hands shape the dough into a ball and place it onto the parchment-lined baking sheet. 
- Using a kitchen knife or bench scraper, mark a large deep cross across the center of the loaf, scoring about 2/3rd of the way down. 
- Sprinkle the loaf with a little more flour and finish with a liberal sprinkling of oats. 
- Bake for 35-45 mins. Check after 35 minutes. The loaf should sound hollow when you tap the base of it. 
- If enjoyed right away, allow the loaf to cool for five minutes before transferring it to a cutting board. I recommend serving it slightly warm with your favorite spread.
