Fig & Walnut Soda Bread

Ingredients

  • 1 cup (150 g) dried figs, chopped

  • 1 cup (80 g) walnuts, chopped

  • 1 3/4 cup (210 g) whole wheat flour

  • 1 1/4 cup (175 g) wholegrain spelt flour

  • 1/2 cup (45 g) rolled oats

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 cups + 3 tablespoons (500 g) plant-based yogurt

Method

  1. Preheat the oven to 420°F (220°C). Line a baking sheet with parchment paper.

  2. Roughly chop figs and walnuts and set aside in a small bowl. Toss in a little flour to ensure the pieces stay separate during baking.

  3. In a large bowl, whisk together whole what and spelt flour, oats, salt, and baking soda. Stir in the chopped walnuts and figs.

  4. Add the yogurt and mix using a spatula or your hands into a scraggy wet dough. Do not worry about it being messy.

  5. Flour your hands shape the dough into a ball and place it onto the parchment-lined baking sheet.

  6. Using a kitchen knife or bench scraper, mark a large deep cross across the center of the loaf, scoring about 2/3rd of the way down.

  7. Sprinkle the loaf with a little more flour and finish with a liberal sprinkling of oats.

  8. Bake for 35-45 mins. Check after 35 minutes. The loaf should sound hollow when you tap the base of it.

  9. If enjoyed right away, allow the loaf to cool for five minutes before transferring it to a cutting board. I recommend serving it slightly warm with your favorite spread.
