Chocolate & Peanut Butter Dates

The simplest and most delicious vegan and sugar-free dessert on earth.

You bite into it, and chocolate starts melting, then you feel sweetness from juicy dates, and then you get hit by creamy, delicious peanut butter and the crunch of toasted peanuts. Every bite is a trip to heaven.

Method

  1. Carefully pit the dates by opening up a slit but not breaking them entirely in half.

  2. Using a small spoon, stuff the dates with peanut butter and sprinkle with the peanuts.

  3. Transfer to a baking dish lined with parchment paper.

  4. In a small bowl, combine the chocolate chips and coconut oil. Melt in a double boiler or the microwave in 30-second increments until smooth and combined, and mix with a spoon to do so.

  5. Drizzle the melted chocolate over the dates to coat or fully submerge them for an enhanced experience :)

  6. Optional to sprinkle with sea salt or crushed peanuts.

  7. Refrigerate the stuffed dates until the chocolate has fully hardened, about 30 minutes.

Notes

  • I suggest avoiding leaving these chocolate-covered dates at room temperature for too long. You want to serve them chilled and leave them in the fridge if you’re not enjoying them straightaway.
