Seed-Packed Savory Tomato Crackers

Savory chia seed crackers packed with nutrient-rich seeds and spices for a crunchy and satisfying snack you will love.

Ingredients

  • 3 tablespoons (70 g) chia seeds

  • 2 tablespoons (15 g) flaxseed meal

  • Shy of 1 cup (220 ml) water 

  • ½ cup (70 g)  raw sunflower seeds

  • ½ cup (70 g) raw pumpkin seeds

  • ½ cup (70 g) sesame seeds

  • 2/3 cup (70 g) rolled oats

  • ½ cup (70 g) brown rice flour (or whole grain flour)

  • 1/2 teaspoon salt

  • Fresh cracked black pepper

  • 2 teaspoons garlic powder

  • 1.5-2 tablespoons olive oil

  • 3 tablespoons (50 g) tomato paste

Method

  1. In a small bowl, combine flaxseed meal and chia seeds. Add water, mix and set aside for 20-30 minutes.

  2.  In a large bowl, mix together sunflower, pumpkin and sesame seeds, oats, flour, salt, pepper, and garlic. Add the chia seed mixture, tomato paste, and oil. Mix well to combine using a spatula or your hands.

  1.  Preheat oven to 365°F (180°C).

  2.  Line a baking sheet (mine is 9x13 in) with parchment paper. Transfer the mixture to a baking sheet and spread to an even layer with a spatula or wet hand. Bake for 35-40 minutes.

  3.  Cut into 48 rectangular crackers.

  4.  Leftovers can be stored in a sealed container for up to 5 days, although I'm sure they will be gone way before that.
