Summer Yogurt Salad

A light summer meal that comes together in a few minutes and tastes refreshing.
Enjoy it as a healthy snack or serve it as a side dish; either way, you’ll love it!

Ingredients



  • 1.5 cups (400 g) Greek yogurt

  • 1/2 lemon, juiced

  • 1 tablespoon olive oil

  • 1-2 cloves of garlic, finely chopped

  • 1 teaspoon dried dill

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Chili to taste

  • Baby greens or peeled and chopped cucumber

If serving as a dip:

  • Toasted Bread

Method

  1.  Add all the ingredients except for the vegetables to the bowl and mix to combine.

  2. Add the greens or cucumber and lightly mix to evenly distribute the sauce.

  3. Place in the fridge until serving.
    (Tip: The salad tastes better the day after it has been stored in the refrigerator, as time allows for all the flavors to come together nicely.)

Notes

  • Feel free to leave the vegetables out and serve as a refreshing sauce with your grilled or roasted veggies.
