Time to read: 4 mins | Time to make: 10 min + rest overnight | Yields: 2 servings

Ingredients

  • 2 tablespoons almond butter

  • 2 cups water (or plant-based milk for a creamier texture)

  • 7 Medjool dates, pitted

  • 1/4 teaspoon vanilla extract

  • 2 teaspoons cocoa powder

  • 1 teaspoon Javy coffee concentrate* or 2 teaspoons espresso coffee dissolved in 1 tablespoon boiling water

  • Pinch of salt

  • 1/3 cup (60 g) chia seeds

Method

  1. Add all ingredients except chia seeds to the blender and puree until completely smooth. Pour into a medium mixing bowl, add chia seeds, and whisk to combine.

  2. Place in the refrigerator for 2 hours or until completely chilled; the mixture will thicken further after a night in the refrigerator.

  3. Spoon into small bowls, and serve with plant-based yogurt and berries.

  4. Store any remaining pudding in an airtight container in the fridge for up to 4 days.

Javy Coffee Concentrate:

  • The coffee concentrate is one of the simplest (and most delicious) ways you can get your morning caffeine fix every day. Say goodbye to crazy coffee equipment and lackluster single-cup coffee makers. With a simple, fast, and delicious bottle of concentrated coffee, you can make your favorite cup of coffee in seconds.

  • If you want a satisfying cup of black coffee, simply add a couple of tablespoons of Javy to some hot water. If you like cold brew, make your Javy with cold water and ice.

  • One of the biggest benefits of going the coffee concentrate route for your morning cup is that it is one of the most affordable coffee options out there, especially for cold brews and lattes. Just one bottle of Javy has about 30 servings of coffee in it.
