Decadent Chocolate Truffles with Coconut Flakes

Ingredients

  • 1/2 cup (50 g) unsweetened cacao powder

  • Pinch of cinnamon

  • Pinch of salt

  • 1/4 cup (60 ml or 50 g) coconut oil

  • 8 Medjool dates, pitted

  • 3/4 cup (75 g) coconut flakes plus 2 tbsp (20 g) for dusting

Method

  1. In a medium size bowl, sift cacao powder. Add cinnamon and a pinch of salt. Add melted coconut oil and mix to combine. The mixture should be relatively thick and smooth.

  2. If your dates are very soft and you don't have a food processor or blender, mash them with a fork in a small bowl or a plate. If you have a blender, use it since it is faster and easier.

  3. Add mushed dates and coconut flakes to the cacao mixture and mix to combine.

  4. Make small balls and dip them into coconut flakes or cacao.

Notes

Dates: if you have a very sweet tooth and regularly eat processed sugar, you might find this amount of dates insufficient. In that case, I recommend using at least 12 dates.
