Chunky Monkey Energy Balls

A nutrients-packed delicious treat that’ll boost you up any time of the day.

Ingredients

  • 1 very ripe banana, mashed

  • 1 cup (250 g) peanut butter*

  • 2 heaping tbsp (50 g) honey or maple syrup

  • 2 1/4 cup (180 g) rolled oats (I used a mix of old fashion and fine)

  • 2 scoops (50g) chocolate protein powder

  • 3 tbsp (50ish g) chocolate chips

Method

  1. Mash banana in a medium-size bowl, add peanut butter and honey, and mix to combine.

  2. Add 150 g of rolled oats and protein powder. If the mixture feels sticky, add more oats. All protein powders have different textures and moisture absorbing capacity. Adjust the amount of oats depending on the protein powder you use to reach the desired texture.

  3. Finally, add chocolate chips. Take a little bit of the mixture and shape it into balls.

  4. Optionally sprinkle coconut or shaved chocolate on top.

  5. Store in the fridge.**

Notes

*  You can substitute peanut butter with 100 g PB fit powder mixed with water. It will yield 246 g when mixed with water.

** They taste better after cooling down.
