Choco-Banana Popsicles

Chocolate-covered bananas are an effortless summer dessert that is healthy and delicious.

Ingredients

  • 3 bananas

  • 4 ounces (115 g) dark chocolate, chopped

  • 1 tablespoon coconut oil

    Toppings:


  • chopped salted peanuts

  • shredded coconut

  • cranberries or other dried fruits

  • nut butter

  • cacao nibs

  • 6 popsicle sticks or wooden skewers

Method

  1. Peel the bananas, slice them in half and insert a popsicle stick into the cut end.

  2. Line a baking sheet with parchment paper. Lay bananas on a prepared sheet and freeze for at least 2 hours or up to 2 days.

  3. When ready to eat, melt the chocolate in a double boiler or in 20-second increments in the microwave.

  4. Dip bananas, one piece at a time, in chocolate, spooning on additional chocolate to cover.

  5. Sprinkle with your favorite toppings.

  6. Enjoy immediately or store in the freezer until you are ready to enjoy.

Notes

  • I suggest avoiding leaving these chocolate-covered bananas at room temperature for long. You want to serve them chilled. Leave them in the freezer if you’re not enjoying them straight away.
