Chocolate Caramel Bars

Savor layers of silky dark chocolate, velvety vanilla, and luscious date caramel, all topped with a delightful crunch of roasted almonds in these irresistible Chocolate Caramel Bars – a wholesome treat that's as good for your taste buds as it is for your soul.

Method

  1. Line a 9x9-in (or 8x8in) baking dish with parchment paper.

  2. Melt 1 cup of chocolate chips with 2 tbsp of coconut oil in the microwave or in a double boiler. Pour the chocolate into the pan and spread evenly. Place in the freezer for 5 minutes.

  3. Add oat flour, vanilla protein powder, maple syrup, and coconut oil to a food processor. Blend until all ingredients come together nicely.

  4. Take the pan out of the freezer and evenly spread vanilla layer. Put it back in the freezer until we make next layer.

  5. In the same bowl of the food processor, add almond butter, pitted dates, coconut oil, and salt. Blend until well combined.

  6. Spread evenly over the vanilla layer. Sprinkle some chopped almonds and lightly press them into the caramel. Put back in freezer.

  7. Mix the remaining 1 cup of chocolate chips and 2 tbsp of coconut oil, melt them and pour evenly over the caramel layer. Use a spatula to make sure the chocolate is evenly distributed.

  8.  Freeze for 30 minutes and if not planning to consume it immediately, place in the fridge.

  9. Once you are ready to serve, remove it from the pan and place on cutting board.

  10. To make clean cuts, dip the knife in hot water and place it under hot water, then wipe it off before slicing. Chocolate melts relatively fast so enjoy immediately or store in an airtight container in the refrigerator or freezer.
