Chia & Berry Yogurt Parfaits

Vanilla and berries in this refreshing combo are the perfect way to start your day. We love these for brekkie, snack, or even dessert. Play with fruit, add peanut butter as an additional layer, or chopped chocolate to make them even more indulgent.

Ingredients

1 1/2 cups (360 ml) vanilla soy milk

1/2 cup (90 g) chia seeds

1 tablespoon maple syrup

2 cups (480 ml) 0% plain Greek yogurt

2 servings optimum nutrition vanilla whey

1 cup (123 g) fresh raspberries

1 cup (144 g) fresh blueberries

SERVING

Mixed berries

Granola, nuts, chopped dark chocolate for the crunch

Method

  1. In a bowl stir the soy milk, maple syrup, and chia seeds, then cover and refrigerate overnight.

  2. Place the Greek yogurt and protein powder in a medium bowl and stir until smooth. Add the berries and stir until well-mixed.

  3. To assemble, get 4, 1 1/2-cup glass storage tubs or large wine glasses.

  4. In each glass, place 1/2 cup of the yogurt mixture and use the tip of the spoon to smooth the top. Measure 1/4 cup of the chia pudding on top of the yogurt and spread evenly. Measure 1/4 cup of the remaining yogurt on top, spread, then dollop about 2 tablespoons of chia pudding on top of that.

  5. Best if served refrigerated. Add garnishes that make you happy.

  6. Can be covered and refrigerated for up to four days.

  7. Enjoy!
