Blueberry Banana Bread

Ingredients

Wet ingredients

  • 250 g (2 medium) bananas, peeled

  • 1/2 cup (100 g) light brown sugar

  • 1/2 cup (90 g) oil

  • 1 tsp vanilla

  • 1 orange, 1/4 cup (60 ml) juice, and zest

 Dry ingredients

  • 2 cups (250 g) spelt flour

  • 1/4 tsp Himalayan salt

  • 5g (1 1/2 tsp) baking powder

  •  1 cup blueberries, fresh or frozen

  • 2 tsp tapioca flour or arrowroot

Method

  1. Preheat the oven to 350°F (180°C). Line a 9in (25cm) loaf pan with parchment paper and set aside.

  2. Place bananas, sugar, vanilla, orange juice, zest, and oil in a food processor and blend until smooth.

  3. In a medium bowl, whisk together dry ingredients. Sift dry ingredients into the wet mixture. Pulse to combine.

  4. Add blueberries and tapioca flour to a small bowl and toss to coat.

  5. Fold in the wild blueberries to the batter using a rubber spatula. Stir to combine, but don't over-mix.

  6. Transfer the batter to the lined pan. Sprinkle with a little bit of brown sugar. Bake for 45 minutes.

  7. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire cooling rack to cool completely.
