Apple & Cinnamon Breakfast Bars

Soft, naturally sweet breakfast bars made with oats, walnuts, apples, and cinnamon. No oil, no refined sugar, and perfect for breakfast, snack time, or meal prep.

Ingredients

  • 1½ cups (400 g) applesauce

  • 1 cup (100 g) walnuts

  • 1¾ cups (150 g) rolled oats

  • 1 tsp baking powder

  • 1½ tsp cinnamon

  • 2–3 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • Optional: 1 scoop vanilla protein

  • handful of blueberries

Method

  1. Blend oats and walnuts until fine.

  2. Add baking powder, cinnamon, and optional protein.

  3. Mix in applesauce, honey, and vanilla. Add ¼ cup (60 ml) of water if using plant-based protein.

  4. Let it rest for 15 minutes. Pour into a lined 9x9-inch pan, top with blueberries.

  5. Bake at 355°F (180°C) for 30 minutes. Cool, slice, and drizzle with peanut butter.

Notes:

Store in the fridge up to 7 days or freeze up to 2 months. Warm slightly before eating for the best texture.
