Almond & Date Chocolate Treats

Ingredients

  • 1 cup (160 g) almonds

  • 1/2 cup (60 g) oat flour

  • 12 Medjool dates, pitted

  • 6 tablespoons (76 g) healthy cacao spread*

  • 3 tbsp (18 g) cocoa powder

  • pinch of salt
     

Topping

  • 1/3 cup (50 g) dark chocolate chips

  • 1 teaspoon of coconut oil

  • Sea-salt

  • Freeze-dried raspberries

Method

  1. In a food processor, combine almonds, oat flour, dates, cacao powder, chocolate spread, and a pinch of salt. Blend until you reach your desired consistency. For a finer texture, process the almonds into flour before adding the other ingredients.

  2. Once blended to a slightly crumbly but moldable consistency, it's time to shape the mixture into balls. I ended up with 22 pieces. Place the in a fridge foe 15-30 minutes.

  3. To add an exquisite touch, melt some dark chocolate for drizzling or dipping. Garnish with a sprinkle of sea salt and freeze-dried raspberries for that extra flair.

  4. Store leftovers in the fridge in a sealed container.

Notes

ALMONDS: I used raw almonds, but they can be roasted and replaced with other nuts.

DATES: It's important that dates are soft and juicy. Soak your dates in hot water for 15 min if they seem dry.
